Whipping up something that’s delicious and healthy, is a tricky task. Especially if you’re following a diet, mind it, a strict diet. Keto diet or ketogenic diet is one such diet in which you need to be extra careful about what goes on your plate. An essentially low carb high fat diet, Keto diet comes with its own benefits. But we aren’t here to discuss about the good, bad and ugly. The beauty about being on a Keto Diet is that there’s a lot of super yummy food that you can get your hands on. Cheese, butter, oil, ghee, and eggs should be your favourites and the list should also include broccoli, mushroom, spinach, bell pepper, chicken, fish, lettuce, and cabbage. Well, just so you’re not landing yourself into trouble, here are 6 awesome Keto-friendly recipes that are entirely Indian by heart.

Meaty Delight – Butter Chicken:

Serves: 2
Ingredients:

Chicken – 1/2 kg (boneless and skinless)
Onion – 1 (peeled and thinly sliced)
Garlic – 3 cloves (minced)
Ginger – 1 tablespoon (peeled and grated)
Heavy cream – 1/2 cup
Olive Oil – 2 tablespoon
Butter – 1 tablespoon
Tomato puree – 2 cups
Curry powder – 1 tablespoon
Lemon juice – 2 tablespoons
Pepper powder – 1/2 teaspoon
Salt – as per taste

How To Go About It:

– In a small bowl, mix lemon juice, a teaspoon of olive oil, and 2 teaspoons of curry powder. Marinate the chicken with this mixture and set aside.

– Add about a tablespoon of olive oil to a heavy bottomed frying pan. Once the oil heats up, add butter and toss in the onion, garlic, and ginger. Saute for about 5 minutes.

– Add the remaining curry powder, pepper, salt, and pour in the tomato puree. Simmer for a few more minutes while stirring continuously.

– Once the gravy starts to boil, add in the marinated chicken. Boil for a minute and then simmer the flame. Cook for 15 minutes or until the meat is thoroughly cooked.

– Add the heavy cream and and stir well. Serve hot!

Note: Feel free to add your favourite seasonings. Add in more curry powder or chili powder if your tastebuds crave for more spice!

Fishy Affair – Rohu In Coconut Gravy:

Serves: 2
Ingredients:

Rohu – 500 grams (boneless. Washed and pat dried)
Ginger garlic paste – 2 teaspoons
Onions – 2 medium (peeled and finely chopped)
Cardamom – 1 whole
Cloves – 2-3
Cinnamon Powder – 1/2 teaspoon
Curry Leaves – a few
Green Chillies – 2 (slit)
Pepper Powder – 1 teaspoon
Turmeric – 1 teaspoon
Lime Juice – 1 tablespoon
Coconut Oil – 3 tablespoons
Coconut Milk – 1/2 cup
Salt – as per your taste

How To Go About It:

– In a small cup, mix lemon juice with turmeric, and pepper powder. Marinate the fish with this and set aside for at least half an hour.

– In a pan on medium flame, heat about 1 1/2 tablespoons of coconut oil and fry the fish until golden brown on all sides. Set aside.

– Heat the remaining oil in a heavy bottomed pan and add cardamom, cinnamon powder and cloves. Add green chillies and curry leaves, and fry for a minute.

– Add in the ginger garlic paste and onions. Fry until the onions start browning and the raw smell of the paste is gone.

– Pour in the coconut milk. Let it boil for about 3-4 minutes. Add water if needed and ensure the consistency of the coconut milk remains thin.

– Lower the heat and add in the fried fish. Cover and cook for 5 minutes before turning off the flame.

– Let the fish soak up the flavoured coconut milk. Serve hot garnished with coriander.

Fishy affair – Rohu in coconut gravy

Egg-tastic Uttappam:

Serves: 2
Ingredients:

For the Dosa:
Cauliflower – 1 cup (cut and blanched)
Spinach – 1 cup (chopped and boiled)
Eggs – 2 whole

For the paste (Grind these together):
Red chili Paste – 2-3 teaspoons
Garlic Cloves – 2-3 (peeled and minced)
Salt – half teaspoon

Onions – 1 (peeled and finely chopped)
Oil – as required
Salt – as per your taste

How To Go About It:

– In a pan fry the onions and set aside.

– Add the cauliflower and spinach in a mixer jar and grind them to a smooth consistency. Pour the mixture into a large bowl. Beat 2 eggs and add them in too. Add salt, mix well and set aside.

– Heat a tava (flat frying pan) and smear some oil. Spread the egg mixture to form a small uttappam. Once it starts to bubble spread one thin coat of the paste, a little fried onions. Cover and cook until the sides start to brown.

– Flip and cook until golden brown. Serve hot.

Vegetarians ok please!

Fried Karela:

Serves: 2
Ingredients:

Bitter gourd – 4-5 (deseeded, and cut as desired)
Red Chili Powder – 2 teaspoons
Fried Jeera Powder – 2 teaspoons
Dhaniya Powder – 2 teaspoons
Butter or Olive Oil – to fry
Salt – as per your taste

How To Go About It:

– Place the karela is a bowl and add in all the seasoning. Add salt and mix well. Set aside for about 20-25 minutes

– Heat oil in a pan. Toss in the karela and fry. If you’re using fresh oil then you could choose to deep fry as well or shallow fry will serve well too.

– Ensure they’re done both sides before tossing into a serving dish.

Mixed Vegetable Bhaaji:

Serves: 2
Ingredients:

Capsicum – 1 medium sized (deseeded and finely chopped)
French Beans – a handful (chopped)
Cabbage – 1 cup (chopped)
Tomato – 1 medium sized (chopped)
Onion – 1 small (peeled and chopped)
Ginger – 1 teaspoon (peeled and grated)
Garlic Cloves – 2-3 (minced)
Jeera – 1 teaspoon
Garam Masala – 1-2 teaspoons
Lemon Juice – from half lemon
Olive Oil – 2 tablespoons
Butter – for garnishing and extra taste
Water – as needed
Salt – as per your taste

How To Go About It:

– In a pan, heat oil. Add jeera and wait for them to po. Fry the onions, ginger, and garlic. Add the garam masala and salt.

– Add boiling water to this and toss in all the veggies. Cover and cook until the veggies are soft and tender.

– Once done, turn off the flame and use a masher to mash the cooked veggies. Cook until the water evaporates and the consistency thickens.

– Transfer into serving bowl, add lime juice and mix.

– Garnish with coriander and butter, and serve hot.

Mixed Vegetable Bhaaji

Cauliflower Upma:

Serves: 2
Ingredients:

Cauliflower – 1 cup (blanched)
Onion – 1 medium sized (peeled and chopped)
Peas – 1/2 cup
Green Chillies – 2-3 (chopped finely)
Curry Leaves – handful (washed and separated)
Mustard seeds – 1 teaspoon
Ginger – 1/2 teaspoon (grated)
Coconut Oil – 1 tablespoon
Salt – as per your taste
Fresh Coriander – for garnishing

How To Go About It:

– Heat oil in a pan and add the mustard seeds. Add the onions when the mustard starts popping. Add the curry leaves and fry for a minute.

– Add the ginger, green chillies, and peas. Cook until the peas are just tender. Mash the blanched cauliflower and add it to the pan. Mix and allow to cook in open pan until the excess water evaporates.

– Transfer into a bowl. Garnish with coriander and enjoy!
